Almond Flour Chocolate Chip Cookies

  • 1 tbsp ground flaxseed
  • 2 cups almond flour
  • 1/2 tsp kosher salt
  • 1/4 tsp heaping baking soda
  • 3 tbsp water
  • 1 tsp pure vanilla extract
  • 1/4 cup coconut oil melted & cooled
  • 1/4 cup pure maple syrup
  • 1/2 cup mini semi-sweet Ghirardelli chocolate chips
  1. Preheat over to 350 F degrees. Line a baking sheet with parchment paper. Set aside

  2. Mix together almond flour, salt, baking soda & flax in a bowl.

  3. Stir in the oil, maple syrup, vanilla extract & water into the batter

  4. Fold in the chocolate chips

  5. Use a cookie scoop to place the dough onto the prepared baking sheet.

  6. Bake for 7-8 minutes

  7. Gently press down to flatten

  8. Let cool & enjoy!
